My break ends tomorrow. But that doesn’t mean “Fin!” I’ll be continuing these cooking adventures and conjurings of the spirit gods of french cuisine indefinitely. Until they pry the slotted spoon, the shallot, the pot of rendered duck fat from my oven-scarred hands. You’ll see.

You had me until you got to the ‘rendered duck fat’! I’ll stick with shallots and other items from your repetoire…. I await your next culinary masterpiece…

You wouldn’t turn down that duck fat were it offered up in a fine cassoulet! And that is indeed my holy grail. Taking. baby. steps. toward. the. perfect. cassoulet. I’ll post on this, but my new cooking schedule will be Monday, Tuesday and Wednesday. The journey has begun!
